Chocolate Crumble Cookies with Ice Cream


What You’ll Need

  • 1 1/3 cups oat flour

  • 1/4 cup + 2 tbsp unsweetened cocoa powder

  • 2 tsp baking soda

  • 1 1/4 tsp kosher salt

  • 2 sticks (1 cup) unsalted butter, at room temperature

  • 1 cup turbinado sugar

  • 1 1/3 cups + 1 tbsp granulated sugar

  • Dark chocolate chunks (70 percent)

  • Vanilla ice cream, for serving


Procedure

  1. Prep the chocolate: Pulse the chocolate in a food processor until it forms pea-sized pieces. Transfer to a plate and freeze for 30 minutes.

  2. Prep the oven and dry ingredients: Preheat oven to 325°F (160°C). Line two rimmed baking sheets with parchment paper. Sift together the oat flour, cocoa powder, baking soda, and salt.

  3. Make the dough: In a large bowl, beat the butter with both sugars on medium speed using an electric mixer until light and fluffy, about five minutes. Gradually beat in the flour mixture just until incorporated. Gently fold in the frozen chocolate chunks.

  4. Form and bake cookies: Drop almond-sized clumps of dough in a single layer onto the prepared baking sheets. The dough will look crumbly and uneven. Bake for 8 to 10 minutes, until the tops are dry, but the centers remain soft and crumbly.

  5. Serve: Let cookies cool completely, then serve over a scoop of vanilla ice cream. Enjoy!
