RECIPE: Golden Chocolate Raspberry Delight

A luxury dessert people can’t resist; let’s go all out: rich, decadent, visually stunning, and unforgettable in flavor. Here’s a recipe concept for "Golden Chocolate Raspberry Delight”, a dessert that screams indulgence and elegance.



Golden Chocolate Raspberry Delight


Servings: 4-6

Time: 1.5–2 hours (plus chilling)


What You’ll Need


For the Dark Chocolate 

  • 200g high-quality dark chocolate (70% cocoa)

  • 1 tsp coconut oil (for shine and smoothness)


For the Raspberry Mousse:

  • 200g fresh raspberries

  • 50g sugar

  • 200ml heavy cream

  • 1 tsp vanilla extract

  • 1 tsp powdered gelatin (or agar-agar for vegan)


For the Almond Praline Base:

  • 50g roasted almonds

  • 50g sugar

  • 10g butter

  • Pinch of salt


For the Gold Mirror Glaze:

  • 50g sugar

  • 50g glucose syrup

  • 50ml water

  • 50g sweetened condensed milk

  • 50g white chocolate, finely chopped

  • Edible gold dust


Optional Garnish:

  • Fresh raspberries

  • Mint leaves

  • Gold leaf


Procedure

1. Prepare the Chocolate 

  • Melt dark chocolate with coconut oil over a double boiler until smooth.

2. Make Raspberry Mousse

  1. Heat raspberries and sugar in a pan until soft. Blend and strain to remove seeds.

  2. Bloom gelatin in 1 tbsp. cold water, then mix into warm raspberry puree. Let cool slightly.

  3. Whip heavy cream to soft peaks and fold into raspberry puree gently.

  4. Chill mousse until slightly set.

3. Almond Praline Base

  1. Melt sugar in a pan until amber. Add butter and almonds, stir, and pour onto parchment. Cool, then chop roughly.

4. Gold Mirror Glaze

  1. Heat sugar, glucose syrup, and water until 103°C (soft-ball stage).

  2. Remove from heat and stir in condensed milk and white chocolate until smooth.

  3. Mix in edible gold dust until shimmering.

  4. Let glaze cool slightly 

5. Finishing Touches

  • Garnish with fresh raspberries, mint, and a touch of gold leaf
