A respected leader in the Philippine hospitality scene, Chef Pat brings an impressive portfolio shaped by key culinary roles across top-tier hotels. Her expertise spans both pre-opening and established operations, having contributed to the successful launches of four major properties: Hilton Manila, Hilton Clark, Novotel Suites Acqua, and Mercure Manila Ortigas. Prior to joining Dusit Thani Manila, she served as Executive Sous Chef at Conrad Manila, where she further honed her leadership and creative culinary approach.

Chef Pat shares a personal connection to Dusit Thani Manila and is poised to usher in a fresh era for the property’s gastronomic direction. She aims to elevate Filipino cuisine through a modern lens while championing the brand’s Tree of Life philosophy, a commitment to sustainability, cultural sensitivity, and the delivery of heartfelt, gracious hospitality.

In her new role, Chef Pat will helm the hotel’s renowned dining destinations, including Benjarong Manila and UMU, both recently recognized as MICHELIN Guide Selected Restaurants for 2026, as well as the beloved all-day dining venue, The Pantry.
