The certificate program is structured to fit a modern lifestyle, with three sessions per week focusing on immersive kitchen experiences led by expert chef-instructors. Students will train in professional kitchens, mastering everything from classical French techniques and international flavors to essential butchery and pastry fundamentals.

• Create foundational sauces, stocks, and iconic dishes from French and Mediterranean cuisine

• Dive into the basics of pastry and dessert presentation

Month 1: Culinary Foundations

Explore poultry, beef, lamb, pork, duck, fish, and shellfish butchery and preparation. Students will prepare classic dishes such as Beef Bordelaise, Poulet Rôti Grand Mère, and Poached Salmon with Hollandaise.


Month 2: Culinary Exploration

Dive into regional French cuisine, Mediterranean flavors, and essential pastries. Highlights include Paella Valenciana, Lamb Tagine, Bouillabaisse, and desserts like Brioche, Apple Pie, and Crema Catalana.
