One Pan Baked Teriyaki Chicken


Teriyakki Chicken

Ingredients:

  • 8 pieces of chicken drumsticks

  • 1 ½ cup jasmine rice 

  • 1 can of corn kernels

  • Green beans

  • Fresh ginger

  • Green onions

  • Sesame seeds

  • ¼ cup Japanese mayonnaise

  • 2 ½ cups chicken broth

  • 1 tablespoon oil 

  • ¼ cup teriyaki sauce


Directions:

  1. Preheat the oven to 180 degrees Celsius.

  2. Finely grate some fresh ginger, cut some green onions into shreds, and then set aside.

  3. Drain the corn kernels, cut the beans into pieces, and then set aside.

  4. Take a bowl and combine the chicken drumsticks and teriyaki sauce together. Make sure every piece is coated well.

  5. In a flameproof baking dish placed on medium heat, add the oil. 

  6. When the oil is hot add in your chicken until it is evenly browned.

  7. Once the chicken is browned, transfer it to a plate.

  8. Add the jasmine rice and chicken broth to the pan. Stir well. 

  9. Bring the chicken broth and rice to a boil then add the chicken back to the dish.

  10. Cover the dish with foil and bake for 20-25 minutes. 

  11. After 20-25 minutes remove the chicken and place it on a plate.

  12.  Add the corn and green beans to the rice. 

  13.  Add the chicken back on top of the rice and vegetable mixture.

  14. Place it back in the oven for another 10-15 minutes until the chicken is brown and cooked through. 

  15. Once the chicken is cooked, add the green onion, sesame seeds, and a drizzle of mayonnaise to garnish the dish. 


Notes:

  • You can use store-bought teriyaki sauce or make a homemade sauce. For homemade teriyaki sauce just add water, soy sauce, brown sugar, ground ginger, and garlic powder together into a saucepan. Heat up for a couple of minutes. Add some cornstarch dissolved in water into the sauce to get a thicker consistency.

  • You can opt to use vegetable broth or any other kind of broth if you do not want to use chicken broth.

  • You can also switch out the vegetables for some other options such as chopped-up carrots, peas, bean spouts, spinach, broccoli, and bell peppers. Just keep in mind that the cooking time for the vegetables may vary.

  • Jasmine rice can also be switched out for other types of rice such as brown rice, long grain, or basmati. 

  • If drumsticks are not available or you want something boneless you can also change drumsticks into chicken breast, wings, or thighs if that’s what you prefer. Keep in mind the cooking time for the different parts of the chicken. Adjust your cooking time accordingly.

  • You can also use this recipe with other meats and fish such as beef, pork, salmon, and even tofu if you have dietary restrictions. 

  • For Japanese mayonnaise, the easiest one to find is probably Kewpie mayonnaise. You can find it in your Asian grocery store or maybe in the International aisle of your local supermarket.
