Recipes For The Holidays: Festive Confetti Shrimp Pasta

(Serves 8)


Ingredients: 

  • 1 pack of your choice of pasta (16oz)

  • 1 cup chopped sweet red pepper

  • 1 cup chopped green pepper

  • 1 cup chopped yellow pepper

  • â…“ cup chopped onion

  • 3 cloves of garlic, sliced thinly 

  • salt and black pepper

  • dried oregano

  • chili flakes

  • ¼ cup olive oil

  • 2 pounds cleaned and cooked shrimp

  • 1 lemon


Directions: 

  1. Boil and cook your choice of pasta.

  2. In a saucepan saute the peppers, onion, garlic in olive oil. 

  3. Add in all the seasoning according to your taste.

  4. Once the peppers are tender, add in the shrimp.

  5. Once your pasta is cooked, drain and add into a large serving dish or bowl.

  6. Toss in the shrimp and pepper mixture into the pasta. 

  7. You may drizzle extra olive oil if needed.

  8. Add the juice of one whole lemon. (You may opt to slice the lemon into wedges and serve on the side if serving the dish on individual plates.)  

  9. Lastly, sprinkle the cheese on top before serving.
