(Approximately 3 dozen)
Ingredients:
2 cups all purpose flour
¼ tsp baking powder
½ tsp kosher salt
2 sticks unsalted butter (room temperature)
¾ cup confectioner’s sugar
2 tsp vanilla extract
Preparation:
In a bowl add the fluor, baking powder and kosher salt. Whisk together until well incorporated.
In a separate bowl, beat the butter and sugar together until light and fluffy. This may take a couple minutes.
Then add the vanilla extract to the butter mixture. Mix well.
Then gently add the flour mixture to the butter mixture in small increments until it is well mixed together.
Once you have a well incorporated dough, divide it in half.
Shape each batch of dough into a log. Aim for around 7 inches long and 1 ½ inch wide.
Cover in plastic wrap and chill in the refrigerator for a few hours.
Directions:
Preheat your oven to 175 degrees celsius.
Line your baking sheet with parchment paper.
Then slice the log into ¼ inch thick cookies.
When placed on the baking sheet make sure there is at least 1 inch space between the cookies.
Bake in the oven until slightly golden. This may take anywhere between 10-15 minutes.
Let it cool before serving.
