Tropical Chicken Stir-Fry with Bananas and Pineapple

This dish is a perfect blend of sweet, savory, and tangy flavors, bringing a healthy tropical twist to your dinner table!
What You’ll Need
2 chicken breasts
2 bananas
1 cup of pineapple, diced
1 red bell pepper
2 garlic cloves, minced
1 tsp ginger, grated
1 tbsp olive oil
2 tbsp soy sauce
1 tbsp honey
1 tbsp lime juice
Salt and pepper to taste
Procedure
Dice the chicken into bite-sized pieces and season lightly with salt and pepper. Slice bananas and dice the pineapple. Chop bell peppers and prepare garlic and ginger.
Heat the coconut oil in a large skillet or wok over medium heat. Add the chicken pieces and cook until golden brown and fully cooked, about five to seven minutes. Remove and set aside.
In the same skillet, add a bit more oil if needed. Sauté the garlic and ginger for about 30 seconds until fragrant. Toss in the pineapple and red bell peppers. Cook for two to three minutes until they begin to soften. Gently add the banana slices and cook for one to two minutes, being careful not to mash them.
In a small bowl, whisk together the soy sauce, honey and lime juice. Pour the sauce over the skillet ingredients and toss gently to coat.
Return the cooked chicken to the skillet and stir everything together. Cook for another two to three minutes until flavors meld.
Garnish with fresh cilantro and serve hot over brown rice or quinoa for a complete meal.
